The Edmonton Aon Hewitt team provided a beautiful BBQ lunch for our families at the House on June 9. The House smelled like a restaurant, and the tables in our dining room were packed with families who thoroughly enjoyed the meal and the time with the Aon team. One of their dishes was a delicious macaroni salad, and with the summer picnic season upon us, we asked its creator, Heather, for the recipe. She graciously shared the recipe and her thoughts after serving our families through Meals that Mend:
“I am amazed by the openness and friendliness of the families at the House. They were so willing to share their stories, and were friendly and thankful for the meal,” says Heather.
1 pkg elbow macaroni, cooked, drained, and cooled
3-4 dill pickles (no garlic) finely chopped
4-6 hardboiled eggs, chopped
4 green onions, finely chopped
Dill weed to taste
1-2 cups of mayo
2 Tbsp mustard
Thin with pickle juice
Mix all ingredients and dress with prepared dressing. Chill before serving.
