Oatmeal Toffee Cookies

Here’s a cookie with the potential to become a family favourite. It’s quick and easy and some would say almost healthy. Come on there’s oatmeal, that’s healthy, right?? And there’s eggs for protein (build your muscles while eating a cookie, what could be better?).


We’re not sure on the health benefits of baking soda but there has to be some. As for the rest of the ingredients, well we have no comment…


1/2 cup butter

1 1/2 cups light brown sugar

2 large eggs

2 tsp vanilla

1 tsp baking soda

1/2 tsp salt

1 1/2 cups all purpose flour

2 cups quick oats

4 Skor bars roughly chopped

Cream the butter and brown sugar until light and fluffy. Add the eggs one at a time followed by the vanilla and mix until well incorporated. Safety alert, if you feel the need to lick the beaters at this point we highly recommend you unplug the mixer first.


But because we’re all about safety, a smarter choice would be to lick the spoon. Better yet, just lick your arm…


Stir in the dry ingredients until just combined and then add your chopped skor bars. As you can see, this is a ‘BIG’ amount of cookie dough to stir so take our advice and recruit a handsome helper…


Drop by rounded spoonfuls onto a well greased or parchment lined baking sheet. Bake cookies for approximately 11 minutes at 350 degrees. Cool slightly and enjoy with a cold glass of milk and a friend.
