We always feel very fortunate to be able to bake with the kids and families at RMHCNA! Over the past few months we have had the pleasure of introducing some new young bakers to the House. It is always exciting for us to be able to share our love for the House and baking all in one fell swoop! Our most recent baker extraordinaire came and helped us spread some spring cheer. We made a variety of treats all bright and fresh! Our guest baker whipped up some fantastically beautiful rainbow cupcakes, sure to help make anyone smile.
3 cups all purpose flour
3 tsp baking powder
½ tsp baking soda
½ tsp salt
1 cup softened butter
1 ½ cups white sugar
4 large eggs
2 large egg whites
4 tsp vanilla
2 tsp vegetable oil
⅔ cup milk
3 – 5 of your favorite food colorings
Cream together your butter and sugar until light and fluffy. Slowly add in your eggs, vanilla and oil. Mix until just combined. Sift in dry ingredients and mix until just incorporated. Pour in your milk and stir being careful not to overmix.
Now divide your batter evenly into 3 to 5 different containers depending on how many colours you have chosen. Add your desired food colouring to each bowl make the colours as light or as dark as you like! To make beautifully layered rainbow cupcakes you will want to add a small spoonful of each color to every cupcake liner. Pile the colours right on top of each other just whatever you do, do not stir them! You will want to fill your liners about ⅔ of the way full and bake at 350 for approx 15 min.
Once cool, ice these anyway you like. The original recipe comes with a vanilla buttercream icing which you could divide and colour the same way. We used a traditional vanilla icing with rainbow sprinkles, ‘cause who doesn’t love rainbow sprinkles? That was also very lovely! You will just have to follow your heart.
