Sugar Doughnut Muffins

Hankering for a doughnut and in a pinch? Here is an easy peasy solution. These doughnut muffins taste just like the real deal. Just ask Kyler, as he once yelled, “Sugar doughnuts. I LOOOOOOOVE sugar donuts!”

Ingredients for the muffins:
¾ cup sugar
1 large egg
1 ½ cups all purpose flour
2 tsp baking powder
¼ tsp salt
¼ tsp nutmeg
¼ cup vegetable oil
¾ cup milk
1 tsp vanilla
Ingredients for the topping:
2 tbsp butter
½ cup sugar for rolling
In a large bowl combine all dry ingredients and set aside. In another large bowl, mix together the sugar, egg, oil, milk and vanilla. Make a well in your dry ingredients and add your sugar mixture slowly. Gently stir until just combined. Bake at 350 degrees for 10 -12 minutes.
While your doughnut muffins are baking, melt your butter. Once your doughnut muffins are cool enough to handle, dip the tops in butter and then the sugar. If you want to spice things up, add some cinnamon to that sugar!
